Default How to cut meat, by a Danish butcher

Some guy filmed his dad, a trained butcher, cutting large peices of meat from costco with some home quality knives so he could have a way to do it on his own later. I came across this tonight while looking for videos on a certain cut of steak. I thought they were pretty good, and worth a watch if anyone had ever thought of buying a huge peice in cryovac and trimming their own steaks. I know Timsta did it with a tenderloin once. I wish this guy would post some more cuts.

Very cool vids. I've done a whole Strip loin, a whole tenderloin, and a whole top sirloin from costco but never done the inside round. I should give that a try. I have a leg up on most people though since I worked as a butcher for 3 years. There wouldn't be much worse than buying a $75 piece of meat and then fucking it up when trying to break it down into steaks. The vids are great though, this should give someone who is interested in saving some money a much better idea of what to do and the strip loin is pretty easy.

I fucking love getting a whole top sirloin at costco. That coulotte portion (the cap) is just perfect for beef stroganoff and then the main muscle is perfect for a roast or steaks, especially for those that like a leaner cut. Plus it's only $40 and feeds 12-15 people or more depending on how much meat they like to eat. I miss cutting, but I sure don't miss being on my feet for 8-9 hours a day.

I was watching those videos last night and thought they were great. They had my full attention, and I thought wow I'd rather watch this guy for thirty minutes more than probably anything I could tune in on tv right now. It helps that this is real knowledge that is useful to me. I really wish they would make a few more and use decent and proper knives.

I need to take another look at the pictures you posted of the tenderloin. Video would be better though, I bet I can find one on the YouTube.

After watching those, I'm tempted to do that sirloin. I want to try a dish made from that cap portion.

It's not a bad mistake though Q, both are triangle shaped, and both are caps, just that the tritip is the cap of the bottom sirloin and the coulotte is the cap of the top sirloin. The tritip has a bit more marbling which makes it better for grilling.

Nice bump RC. God that butcher in the first video you posted was skilled. Just a pleasure to watch him work. While having the right tools like sharp knives is important, there's so damn much technique in what he's doing to make it look so easy. I've broken down a while Loin myself, but haven't done any of the other primal cuts he showed. Wish I'd had more of an opportunity to learn that stuff but so much of the meat in modern grocery stores arrives cut down to the whole muscles like the top sirloin, rib roast, chuck roast, etc. It makes things easy on the retail side but the art of cutting meat is dying out. Fuck, now I want a nice big steak.

Wasn't thrilled with the techniques shown on the second video. Nothing wrong with the way he cut that, but he really dumbed it down for people who have little to no experience with cutting meat. I guess there's value in that but but its a relatively inelegant method.
