Cake: 2 cups sugar 2 cups all-purpose flour 1 1/2 cups small marshmallows 1/2 cup butter or margarine 1/2 cup vegetable oil 3 tablespoons cocoa 1 cup Coca-ColaŽ 1 teaspoon baking soda 1/2 cup buttermilk 2 eggs 1 teaspoon vanilla extract Preheat oven to 350 degrees. In a bowl, sift sugar and flour. Add marsh- mallows. In saucepan, mix butter, oil, cocoa, and Coca-Cola. Bring to a boil and pour over dry ingredients; blend well. Dissolve baking soda in buttermilk just before adding to batter along with eggs and vanilla extract, mixing well. Pour into lined cupcake pans and bake 12 to 18 minutes. Allow to cool before frosting Frosting: 12 tablespoons butter (room temp/soft) 4 cups powdered sugar 1 teaspoon vanilla 4 tablespoons Rum 2 tablespoons milk Add butter to bowl of mixer with paddle attachment and beat until light and fluffy, 2 - 3 minutes. On low speed add powdered sugar 1 cup at a time, waiting till each cup is incorporated before adding the next. On Medium-low speed add vanilla and rum, beat until incorporated. If necessary add milk a little at a time to get frosting to the desired consistancy. Frost cooled cupcakes.
