Default Corn Maque Choux with Grilled Shrimp

Trying something new for the first time- Cajun corn maque choux with grilled shrimp and venison sausage. Not too bad for first try-

The maque choux is supposed to be thicker. Not sure how to get it to the right consistency.

Try making a small amount of roux and add the liquid to it. Equal parts fat (butter, bacon grease, oil, etc) to flour cooked in a hot dry pan until the flour is golden brown (peanut butter color). Then add the liquids. There isn't a huge amount of liquid in this recipe so I'd do maybe 2 Tbsp of flour/fat for it but you can scale the quantity up for more liquid.
