OH CRAP! These are fan-fucking-tastic! The sheer amount of web resources that come up on a simple Google search means you don't need any specific recipes. It's easy, fun, and hugely popular.

With the potatoes and corn in it, you may not feel the need for more starch, but ... but, if you're game to try some deep frying, I'd make hush puppies to go with it. Add some shredded cheese, and/or diced jalapenos to some of them.

Garlic bread is also a great side if you want more carbs. have lots of extra cajun seasoning and hot sauce to add.

More shrimp/craw-fish/sausage, less filler (corn, potatoes, bread, etc...).

And yes, you GOTTA have hot sauce on stand-by even if you don't personally like it.

And of course...

Really, really subjective question, but I'd say it is way more "flavor" than heat. Maybe a 2 or 3 as far as spiciness goes? Just my $0.02. YMMV. (Although, I can't say I've ever heard of, seen, or tasted a boil withOUT Old Bay or its equivalent...it would seem to be extremely bland and off-tasting without it.)
