Are they pretty much universal, or do you have to buy a new one when you get a new TV?

They are rated for certain sizes/weights... So if you get a bigger TV (who gets a smaller TV?), you may need a new one.

Spot on. If you are getting one now, grab one that has your current set (say, 42") at the LOWER end of the scale, allowing you to move up the scale to a larger/newer set later (say, 60").
You'll also want to verify the bracket can handle the weight of your set, but modern flat panels are so light now-a-days, you'll probably be OK, just based on matching the screen size. I'd be more concerned about WHERE you are going to hang it, the wall itself, studs, bolts, etc.
Most of the brackets have "universal" mounting holes [hey! sounds like something Swanky might like!], so you should be good to go matching the set up against the bracket itself.
They make some brackets "low profile" (real close to the wall), "tilting" (able to move set up & down & tilt slightly), and "full motion" (move set in all three dimensions, off the wall itself). You MAY want to think about that, too...in case you have the need to twist the set to the right or left to get a better view in bright sunlight or depending on where people are sitting.
This probably will NOT be a $50 purchase, either. You might get lucky, but if you get a well made, heavy duty, decent sized wall mount bracket, you are looking at probably $100-$300, depending on actual size, maker, seller, etc. Shop around!!!

Wall mounts can be had very cheap. Guys are spot on above here. "Universal" generally means that it is VESA compliant. VESA compliance means that the mounts on the device are of a specified size. But size is everything, but keep the weight in mind.
I just got one free with the purchase of my 52" LCD. So you should be able to find them really cheap. My work gets them all the time. www.geeks.com

I don't have experience with their mounts but lots with their cables and other products and they have been cheap in price but not in quality.
