Recipe for some stupidly easy Mexican Dip. Good for all types of parties - anytime I get invited to a party and ask if I can bring something, this is usually requested:

1 pack of cream cheese (8oz)
1 can of Hormel Chili, no Beans, (15oz)
1 cup of shredded Monterrey Jack Cheese (preferable w/Jalapenos)
Bake @ 350F for 30 minutes

Spread the cream cheese out on the bottom of a pie plate. It helps if you take the cream cheese out of the frig for a while before you're ready to go so it softens a bit:

Spread the chili out on top of the cream cheese then top with the shredded cheese. You can do whatever variation of cheese you like, I typically either shred a block of Monterrey cheese w/jalapenos or get one of those bags of Mexican blend cheese because it saves on having to shred the cheese myself. Don't go overboard with the cheese, too much and it'll be too thick and not easy to scoop out:

Bake @ 350F for 30 minutes. Serve with tortilla chips:

A good alternative is to place several of the wagon-wheel cut jarred jalapenos on top of the cheese before you stick it in the oven to give it some extra heat and flavor.

Wifey makes this and calls it a 7-layer dip. Her other layers are refried beans, guacamole, black olives, diced tomatoes, etc.

Goes great with Fritos scoops.

Yep, that's another of my favorites. This is a good "hot" alternative, as you traditionally don't bake the 7 layer dip, it's usually served cold.

That's pretty similar to a dip I recommended in anotehr thread Large can of chili (I always use armor), jar of Tostido's Queso dip and a pint of sour cream. Nuke, stir and serve with Frito Scoops. If necesary stir in a few good plugs of hot sauce.

We make the exact same dip. Good stuff. We throw a bit of salsa on the top.

We normally nuke it in the microwave, as opposed to baking it.

Microwave works if you're pressed for time, although the cheese will taste a little different (more stringy).

I'll have to try adding salsa sometime, that sounds pretty good.

Uh, perhaps the chili, Mexican blend of cheese and the jalapenos? :D It really tastes like something you'd get at a Mexican restaurant.

I used to make something similar. Take a block of velveeta and cut into cubes. Heat up a can or two of chili on the stove. Melt the cheese in the microwave. Once partially melted, stir in chili.

You can also do it with salsa instead of chili.

I thought I would bump this thread again since football season is upon us. I plan on making it like the OP, but adding jalapenos and bacon to the top.

That's the shit right there! We call it trailer park dip :)
