View Full Version : Coleslaw recipes??
Anyone have a recipe they like for some slaw?
Tim's pork shoulder thread got me thinking about Smokey Bone's pulled pork and their lights out good slaw. I'm a fan of some good slaw. There are a few places that I will get slaw over fries/baked potato/salad. Smokey Bones was at the top of the list, but they went tits up in this area(possibly nation wide) over a year ago.
Their slaw kicks all form of ass imo. I've googled their recipe, but can't find anything.
So if you have a tasty slaw recipe, feel free to share it, as I may try out the crock pot version of some pulled pork, and I have to have some slaw with it.

Here you go, Ive been using this recipe for a while. Make i every time I smoke butts. But lately I've taken the lazy approach, I buy the chopped up slaw mix and add my dressing. Make sure you let it sit in the fridge for a couple of hours before serving.
SLAW:
1 cabbage, coarsely grated
1 carrot, finely grated
1 sweet onion, minced
3 green onions, minced
1 medium sized dill pickle, minced
DRESSING:
1 garlic clove pulverized with a ¼ tsp. salt
2 cups buttermilk
1 cup mayonnaise
1/8 cup dill pickle juice
1/8 cup vinegar
2 tbsp mustard
1/2 cup white sugar
3/4 tsp. salt
1 tbsp. celery seed
Pinch cayenne pepper
1. Combine cabbage, carrot, onions and dill pickle in a large mixing bowl.
2. Whisk together mayonnaise and buttermilk. Add remaining ingredients and whisk until uniform.
3 Pour over cabbage mixture

Here is a recipe I use. No mayo in it. Very light and great in the summer time.
Cole slaw
1 cabbage
1 - 2 carrots (grated)
1/2 med onion (grated)
1 cloves garlic (crushed)
red wine vinegar
oil
pinch of sugar
parsley
pinch of salt
pinch of oregano
pinch of marjoram
Shred cabbage. Add onion, carrots, garlic. Add vinegar and oil to taste. Add rest of ingredients and mix well.

I'll have to try one of these but to be honest there isn't any slaw I've ever tasted that compares to KFC cole slaw. Nothing even close... :(

Here's a cole slaw recipe from Foodtv.com. Emerill's I believe. I like the dijon mustard in it a lot. I use it on top of pulled pork sandwiches.
Cole Slaw:
3/4 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup packed light brown sugar
3 tablespoons apple cider vinegar
2 tablespoons buttermilk
4 teaspoons celery seeds
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne
3 cups shredded green cabbage (about 1/2 head cabbage)
3 cups shredded red cabbage (about 1/2 head cabbage)
1 green bell pepper, finely diced
1 large carrot, peeled and shredded
1/2 cup grated yellow onion
1/4 cup minced fresh parsley
In a bowl, combine the mayonnaise, mustard, sugar, vinegar, buttermilk, celery seeds, salt, pepper, and cayenne, and whisk well to dissolve the sugar.
In a large bowl, combine the remaining ingredients. Toss with the dressing until evenly coated. Adjust seasoning, to taste. Place in the refrigerator, covered, to chill slightly before serving.

I went with this one today. I more than likely won't eat all that slaw, as much as I like slaw. Only mod I did was I used the spicy brown mustad, as opposed to the standard yellow mustard.
Cooking up some fajitas this eve. Steak/Chix/few shrimps too. I'll be sure to have a bit of slaw with the fajitas.

If you make slaw with mayo, and if you can find it, do yourself a favor and try Duke's brand mayo. It's fantastic stuff for salads like slaw, potato salad, etc., as it doesn't have the sugar alot of mayos do. Mmmm, I loves me some Duke's mayo.

I'm going to defer to the unofficial Mancave God of Food, Alton Brown.
http://www.foodnetwork.com/recipes/alton-brown/marinated-slaw-recipe/index.html
Ingredients
1/2 head Napa cabbage, shredded, salted, and rinsed
2 red bell peppers, thinly sliced
2 green bell peppers, thinly sliced
3/4 cup apple cider vinegar
1 tablespoon mustard seed
1 teaspoon celery seed
1 cup sugar
Directions
Toss the cabbage and peppers and place into a strainer resting over a bowl to drain for 2 hours. Then place into a mason jar.
In a small saucepan, bring the vinegar, sugar, mustard seed, and celery seed to a boil. Pour over the cabbage and the peppers. Store in the refrigerator for 3 days before serving.
Yield:
Preparation time: Cooking time: 5 minutes Ease of preparation: easy
or http://www.foodnetwork.com/recipes/alton-brown/asian-slaw-recipe/index.html
1 (3-inch) piece ginger, grated fine
1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 lime, juiced
2 tablespoons sesame oil
1/2 cup peanut butter
1 head Napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
2 serrano chiles, minced fine
1 large carrot, grated fine with a peeler
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chiffonade cilantro
2 tablespoons chiffonade mint
1/2 teaspoon ground black pepper
Directions
In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing. You can save some of the dressing to dress noodles that can be added to this dish along with stir fried pork to make an entire meal.
Upon further review. The slaw I made was pretty solid slaw. The only thing I'd do is back up the celery seed to 1/2 tbs. Pretty strong on the celery seed, but as a whole, its good stuff.

Made this last night and it is good. But I didn't put enough cabbage in it. It's more like cabbage soup then coleslaw. Got to stop by the store on my way home and pick up more cabbage.
Really good if you like sweet coleslaw best I've had!!!

All I have to say is
OMFG!
If making good cole slaw is that fucking easy why does everyone's slaw taste like shit? I have had many different types of slaw from stores to restaurants and they all suck compared to the sweet KFC cole slaw. This recipe fucking rocks!
I was a little worried after mixing the dressing 'cause you could really smell the vinegar. But it just fucking rocks.
I think my next batch I'll add some red cabbage, ¼ or ½ head, just to add some more color...
I'm making some of this slaw for the 4th. Probably make it up on the 2nd or 3rd just so it gets all good and chilled and mixed up.
My SIL will ONLY eat KFC's slaw. She is THE pickiest eater on the goddamn planet. She won't eat Chinese food, doesn't use mayo, ketchup, or any other sauce on anything. Go to a restaurant, and she will eat a) an hamburger, b) chicken strips, or c) pop corn shrimp....not to forget, she doesn't drink either. She is a big bowl of fun and excitement.

Slaw is ready for the 4th!
I added some red/purple cabbage, left out the pickle and reduced the amount of celery seed. Slaw greatness achieved.
