View Full Version : Need Pork Shoulder Help!

Hey guys, I'm looking for a recipe to make shredded pork/pulled pork from a pork shoulder and I'm not exactly sure what kind of recipe to use. First off I have at my disposal, a large crock pot and/or an oven, but I don't have a proper pot for the oven so I'd prefer to use the crock pot I think. I would like to make a big batch of meat, like a 3-5 lbs shoulder and use the meat for several different dishes including bbq pork sammiches, mexican food like burritos or tamales, or whatever else occurs to me. So what I'm thinking is that I need a recipe that would make some delicious pork but that could be doctored up further with bbq sause or salsa or whatever for the specific dishes. Any ideas? Also I'm assuming that I should get a bone in shoulder for extra flavor (assuming it would fit in the crockpot). Any thoughts? recipe ideas? Need help!

If you're cooking in the crock pot, I'd just use the basics since you want to use the leftovers for various dishes.
Garlic, onions, salt, pepper, cumin, chile powder. I'd throw in some olive oil and dark beer. You can add pretty much anything, as long as it all balances itself out.

Would you do a rub with the seasonings first? Overnight? or jsut throw everything in the crock pot and let 'er rip for 8-10 hours?

here's an idea
put your favorite rub on overnight
put the roast in a broaster pan for about 2 hours at 250 with a 1/2-1 bottle liquid smoke and about 1 cup water
then take out...chop into manageable size pieces and put into crock pot....put on high for 4 hours...then low for 4-6 hours more...pull bone out and any other big pieces of grissle/fat/skin
put into a collander and rinse all the extra fat out with hot water..press water out and let drain for 10 minutes
put back into crock pot to heat....or in size quantities you want to save/freeze...etc
sauce of choice....done.

This is how I make it. I just take the shoulder (no bone not enough space for me) and rub it down with just store bought pork rub (Famous Dave's Rib Rub), salt and pepper, but make sure to get it all over and inside all the cuts and holes from where the bone was. Wrap it up and stick it in the fridge over night.
I cook it in a crock pot. I cut up 1 large onion or 2 small ones in big chunks, 4 or 5 cloves of garlic just smashed (I put some onion and garlic in the bottom under the pork and some on top of the pork then cover with water. I can't remember how long I cook it for but I think it was 5 hours on high or 8 hours on low.
When it's finished (I think 160 deg) pull it apart put back in the crock pot (you will have to clean it first it gets pretty nasty) add some bbq sauce (again Famous Dave's Sweet & Zesty for me) mix well and cook until the sauce gets heated up about 30 min.
Not real bbq I know but very easy and tastes great to me.
It's all about the sauce for me!!!
If I can find the recipe at home I will post it later.

Crock pot.
aromatics (onion garlic etc etc)
Rub down meat with fav spice.
half water half beer to 1/4 of the meat. adding when neccesary. (don't want to make a soup but don't want it to dry out either.
once a fork slide in easily pull out and shred. Put back in crock and do what you like.
Pulled pork is easy yet so so so good!

I just started doing this myself over the past month or so. I take the meat, salt/pepper/garlic salt it on all sides. Place in crockpot. Dice up 3-4 cloves garlic real fine, mix with a cup or two of water and pour around the meat in the crock pot. Turn on low, cook for 24 hours. Drain water, slide the fat off of it and then take 2 forks and shred the meat. At that point, you can add bbq sauce for flavor, or a gravy from the drippings....etc. Whatever you want at that point. Good shit. I just did 6 lbs of bbq pork for my kids baptism this past weekend, good stuff.

I'd rub it down with seasonings and then brown every side of it in a pan. Throw it in the crock pot and set to low and cook all day.
