Sausage Balls & Sauce

Never met anyone who didn't like them.

1 12 oz pkg Jimmy Dean Sausage
1 lb shredded Cheddar cheese (I use mild)
1 cup Bisquick

Mix until well blended. Roll into balls the size of 1/2 a golf ball.

Bake 20-30 minutes in 350 oven until cooked/browned on top. You have to watch after 20 minutes depending on the size of your balls. If you have big balls, it takes longer.

Also, bake on the slotted draining oven pan. And Pam the slots before baking.

Sauce

1/3 cup dry mustard
1/2 cup white vinegar

mix well and set aside for at least an hour or overnight. (longer makes it hotter)

Put in saucepan and add:

1/2 cup sugar
1 egg yolk

Simmer over low heat (it will burn) until it is thickened. Cool, serve room temp.

If you REALLY want to impress, you can try what me and my wife made once for a party. Cook yourself up a brisket how ever you like and slice it nice and then. Then pick you up a few of those $1.19 baggetts from the kroger deli and slice them about 1/4 to a 1/2 inch thick on the bias. Lay them out on a tray sprinkle with olive oil and then toast in the oven. Get yourself a thing of too of Alloutte spread, I prefer garlic and herb. It's a cheese dip/spread most stores carry. Dice up a couple of red and yello peppers into small slices or cubes. Then slap on some Alloutte on the toast, curl on a piece of briskett (or even roast beef) and sprinkle a few pepper pieces on with a chiffinad of basil and VOILA...they look cool and impress ;).

What's the occasion? Food for a classy work Christmas party, or poker night with the guys?

When do you need these by? I make a hot crab/shrimp/artichoke dip that is guaranteed to make everyone happy. Big problem is that I don't really have a recipe, just mix it as I go. But, if I needed to measure quantities in order to pass along the recipe, it'd be a good excuse to make a batch...

Pigs in a blanket:

1 pkg mini cocktail franks / lil smokies (I like Nathan's the best)
1-2 cans of crescent rolls

Unroll the dough for the crescent rolls and pull apart the individual rolls. I usually cut each layed out roll into 2-3 pieces, then wrap a cut piece around a mini frank. Bake @ 375-400 for like 10 minutes or until the crescents are golden brown, for just follow the baking instructions on crescent roll can (it'll take 5-10 minutes longer with the franks).

Beats the hell out of the frozen ones.

frozen meatballs
cookem in the oven
32 oz grape jelly, not preserves or anything, just cheap gov. issue grape jelly.
20 oz chilli sauce, heinz is good but there are others as well.
heat the chilli sauce and jelly in a pot on the stove till the jelly melts and you can mix the too real well
throw that shit in a crock pot to keep it warm, make 2x more than you think you will need. they will be gone in no time.
May not sound that great when looking at the ingredients, but it is damn tastey.
Oh and don't tell people what the sauce is made of til they try it, for some reason it turns people off from trying it, but they are the best sweet and sour meatballs ever.

I take water chestnuts and soak them over night in worchester sauce.

I then wrap bacon around a water chestnut. It can be done with a have a slice.

When you've wrapped all the water chestnuts with bacon pour the remaining sauce over the bacon wrapped chestnuts.

Cook them in the oven until you think the bacon is done, take them out and serve.

Let me tell you, they don't last that long.

I'm a big fan of the crescent wrapped lil smokies/micro hot dogs. Back a few years ago, these were mandatory at any gathering since the kid was a very picky eater.

A real quick and easy favorite:

Take a package of crescent roll dough, and seperate it into 4 squares. Spread with a mixture of cream cheese with a little bit of spicy mustard. Put a few slices of deli ham on the square. Add some thin sliced horseradish cheddar (if your store has it, this stuff is the shit. Very good on french dips, etc.) Roll the squares up into a log, and cut it into about 1/4"-1/2" slices. If you go with the cheddar, definitely spray your pan, and then spread the slices on the pan and bake as directed until the crescent roll dough is done.

There are several variations of this, you could use a little mozzarella, pepperoni and some fresh basil, etc. Maybe roast beef, horseradish instead of mustard, and cheddar?
