View Full Version : Not your average pumpkin pie
I enjoy a slice of pumpkin pie like anyone else. Pecan is the money for me, but a few years ago, I was browsing the wife's mag's for recipes an I happened upon this one.
I make it every year and it kicks all sorts of ass, as far as pumpkin pie goes:
I'm too lazy to write out the recipe, so I took some pics. I even did some close ups if the full recipe is too small/blurry for you older guys.
Its a little late for this year's festivities, but hey, at least I shared it with you guys.

just finished the pie a short time ago.
Biggest pain in the ass is the draining the canned pumpkin for an hour. Just use a big strainer/colander with the paper towels and it gets it drained pretty well.
Wife was taking some pics(she's a fast learner that we like to take photos of our food), I'll post em up once I pull them off the camera.

T, if you like pecan pie, I've got a recipie that will blow you away. I'm a bit of a pecan pie snob myself, meaning I rarely have it anywhere because it never measures up. Let me know and I'll send it along.

Here you go, use any pie crust you want, I use the store bought roll-up ones. Just bake it first and keep it warm. Enjoy.

Filling
6 tablespoons unsalted butter , cut into 1-inch pieces
1 cup packed dark brown sugar
1/2 teaspoon table salt
3 large eggs
3/4 cup light corn syrup
1 tablespoon vanilla extract
2 cups whole pecans (8 ounces), toasted and chopped into small pieces
Instructions
1. Heat over to 275 degrees. Place baked pie shell in oven if not stilll warm.
2. For Pie: Melt butter in medium heatproof bowl set in skillet of water maintained at just below simmer. Remove bowl from skillet; mix in sugar and salt with wooden spoon until butter is absorbed. Beat in eggs, then corn syrup and vanilla. Return bowl to hot water; stir until mixture is shiny and warm to the touch, about 130 degrees. Remove from heat; stir in pecans.
8. Pour mixture into warm shell; bake at 275 degrees until center feels set yet soft, like gelatin, when gently pressed, 50 to 60 minutes. Transfer pie to rack; let cool completely, at least 4 hours. Serve pie at room temperature or warm, with lightly sweetened whipped cream or vanilla ice cream.

It kicks a great deal of ass! I made it for the in-laws visit and rolled it out last night. It was a huge hit.

Like I said, I'm more of a pecan fan, but I do like this for a pumpkin pie alternative.

Good gawd, T, have you EVER taken a shake-free pic? I mean, the joke is getting old, yet one sees the reason why people keep bringing it up. Modern cameras have what I like to call shake reduction or vibration resistance, which uses some sort of harrypotterlike magic to keep the lens still have you snap the photo. I certainly hope you picked one up this black friday.
