The wifey wanted Brunch for TG this year instead of the traditional feast. Although i am doing a couple of breasts for sammies later.

Cranberry Orange Corn Bread. I made it staight form the Jiffy mix boxes seen in the previous pic. Added the zest of an Orange and a handfull of dried cranberries

Pumpkin Pancakes. Made from Altons 'Pancake Mix' and added 1/3 cup of canned pumpkin and a table spoon of Pumpkin pie spice:

Lessons learned...
When you add the Pumpkin to the pancake batter it adds to the sugar content and the caked brown up quicker. lower the heat on the griddle to get the right golden brown on the outside, and fluffyness on the inside.
