View Full Version : Pork Back Ribs, Chicken Drumsticks, Shrimp and Bacon ***Pictures***
So, I get roped into hosting a Couples Game Night at our house. In an effort to make the day more manly and not a complete loss of my man card, I went out and bought, 2 packs of pork back ribs, 1 pack of chicken drumsticks, 1lb of shrimp and bacon.
I don't have a smoker, all I have is a gas grill to cook on. Unless someone can give me advice on a $100 or less smoker that will get the job done, we are stuck with the gas grill.
Here is what I need...
1. Recipe for the Ribs (I have looked at Quads' thread, so if you posted a recipe there and want to direct to me that post, that is fine, but those were for smoking. So make sure you suggest a smoker too.)
2. Recipe for chicken drumsticks
3. Recipe for shrimp wrapped bacon
Here is what you get...
I will pick a recipe for each request, hopefully from different people. Each person will have their choice of...

Haven't tried it yet. In a couple weeks I will be making these. You can't have enough BACON.
Bacon-Wrapped Chicken Drumsticks with Plum Sauce
RECIPE INGREDIENTS
8 chicken drumsticks
1/2 teaspoon salt
1/2 teaspoon pepper
1 small garlic clove (optional), minced
8 rashers bacon
1 tablespoon vegetable oil
For Plum Sauce:
4 ounces plum jam
1 tablespoon apple cider vinegar, or to taste
1 tablespoon mild chili sauce, or to taste
DIRECTIONS
Prepare a fire in a grill. Rub drumsticks with salt, pepper and garlic, if using. Wrap a strip of bacon firmly around each drumstick, securing ends with toothpicks. Brush with vegetable oil and grill, turning frequently and brushing with additional oil, for about 12 minutes, or until cooked through. To test for doneness, pierce meat in the thickest part with a thin skewer. The juices that run out should be clear.
Heat jam for sauce with apple cider vinegar and chili sauce in a small pan or microwave oven and beat together, Arrange hot drumsticks on a platter around a dish of the sauce for dipping.

Here is my favorite smoke chicken recipe...I have also grilled the chicken with this recipe and cooked it in the oven, so you dont NEED to smoke it. You can also just buy a smoke box for your gas grill, I never have tried it but my dad uses this method.
Big Bets Margarita Chicken
The dry ingredients:
2 parts Lime Pepper mix (lemon pepper works just as well)
1 part Chipotle
1 part Roasted garlic with Bell Peppers mix
The wet injection mix:
2 parts Olive oil
2 parts Sweetened Lime Juice
1 part Tequila
Mix the wet ingredients together and inject into all parts of the chicken.
Mix the dry ingredients together in a bowl and dredge the chicken on both sides with the dry mix. Place the chicken in a preheated smoker @ 225 degrees. Cook till an internal temperature of 180 degrees is reached.

Simply take your drumbsticks and put them in a ziplock bag, pour in some dales until there is a nice coating on all the sticks. Let it sit for a few hours at most. This stuff works fast, so only a half hour will really be needed. Throw on the grill, and enjoy.

Just so long as you don't go calling it "barbeque", you can cook the ribs in the oven using a little GOOD QUALITY liquid smoke, and following the recipe and instructions according to Alton Brown on the food network site. For something that doesn't go on a smoker, they produce very good results. And you save $100 on a smoker for now.

If you want a quick way to make the ribs and still have them "fall of the bone" tender try this. Works perfect for me everytime.
Each rack of ribs gets cut in half (after stripping the membrane layer of course). Apply rub to each 1/2 rack (Rub recipe below).
Place each 1/2 rack in the center of a sheet of aluminum foil (big enough to wrap up in a "tent" style, leaving room for air circulation. Place 4 ice cubes on top of each 1/2 rack with rub applied. Wrap up the foil in a "tent" style.
Place foil packs on the grill for about 1 hr and 10 minutes, Take off the grill, open up the foil. The ribs will have shrunken off the bone, and be very tender. Place ribs directly on grill, and baste with favorite sauce for about 10 or 15 more minutes and they are done.
Fall of the bone tender ribs in about an hour and a half.
RUB recipe (Works well with any meat you want to grill.)
1/4 cup Paprika (I use Hungarian Sweet Paprika)
1/4 cup dark brown sugar (you can also use light brown sugar if you want)
1/4 cup of Kosher or Sea Salt
2 tblspns black pepper.
mix together till well blended and apply to meat to be grilled.

Why make it so difficult, see below:
Chicken Drummy's - Franks Hot Sauce:
1 part butter, 4 parts Franks - melt butter, mix.
Brush on the drummy's while grilling, eat with ranch and celery - good shit.
Bacon wrapped shrimp:
Marinade shrimp in Teriyaki overnight. Wrap in bacon. When they're about done grilling, brush on the rest of the Teriyaki.
Simple. Good.

Guma, you don't need to go out and buy a smoker for one event. Now if you plan on using it often go for it. If you have a decent grill with multiple burners you can just use your grill.
Go to the grocery and get one of those 8x8 disposable pans to put the chips in like this:

Soak them for 30+ mins then drain out the water.
Set it up something like this:

I only had the right 2 burners on.
Keep an eye on it or you could end up with this:

I just used a store bought rub and sauce and they were pretty darn good. This will take up your grill for 4+ hours however and I don't know how long you want to be cooking. So YMMV.
And I just saved you $100 on a smoker so I'll take a Hoffa dealer button. :)

Guma, knowing where you are from, head out and find a Greek specialty store. If you can, get there there are some great ones in Tarpon Springs (forgetting the geogrphy at the moment)
Yogurt Chicken:
16 OZ Greek style active yogurt
1 bunch fresh parsley
3 lemons
one sliced med thick (1/4 inch maybe), skin on
two juiced and zested
1 med red onion thinly sliced (rings)
olive oil (I don't measure, maybe 1/4 cup?)
Chicken Legs (also works well with pork country ribs)
put all ingredients except for the sliced lemons into a Ziploc bag and coat with marinade.
let sit over night (3-4 hours MIN) in the fridge. Place on MEDIUM heat grill turning 1/4 turn every 8-1010 minutes until done (Internal Temp +/- 160). Grill off lemon slices until char lines appear and use to squeeze over chicken.

EZ PZ drummies! This is my pop's recipe he uses for Taco Chicken Wings
Free up some grill space too for the rest of the food!
Take drummies and dip in milk. Then shake them up in a ziplock baggie with a mixture of bread crumbs and taco seasoning packets.

Dad brought the microwave cookbook over this evening.
1.5 lbs of wings.
milk
1 tablespoon dry taco seasoning
2 tablespoon fine dry bread crumbs.
(not too sure how many wings this will coat)
Dip the wings in milk. Throw a few of the wings in a ziplock bag with the breadcrumbs and taco seasoning mix. Shake to coat.
Put wings in a 12/7.5 pyrex dish.
Cook for 14 minutes. If you want to prepare ahead of time. Cook the wings for 10 minutes, let cool and put in the fridge. Then wait for the party and the time to serve them up, put back in the micro and nuke it for the additional 4 minutes. They get pretty rubbery if you reheat them over and over. So plan accordingly.
You can control the amount of heat depending on what type of taco mix you use.
They are pretty damn tasty too!

Try brining your shrimp, it will keep them moist when your grilling them long enough to cook the bacon. You should brine shrimp whenever you're not cooking them in a liquid.
1/4 C salt
1/4 C sugar
1 tsp. red pepper flakes (optional, recommended)
Add above to 2 C water in a small pot, heat until dissolved.
Fill a large bowl half way with ice, pour warm brine over ice, wait for brine to cool.
Add 1 lb. of shrimp, add more cold water to cover, give it a stir, put in fridge.
peeled - 30 mins
shells on - 60 mins
Pour out brine and rinse shrimp in cold water. Lay shrimp on a few sheets of paper towel to dry. Then grill baby, grill!
I picked a few recipes and have started all the prep work...

Opened up the ribs, didn't see the membrane that gets mentioned. Cut the ribs into manageable slabs. I did get the Dale's marinade for these. We are eating around 7 so I figure I will put them in the Dales in about an hour for an hour. For the drumsticks I chose the Taco seasoning recipe. Although I will do these in the oven versus the microwave - Tks T

Grill is lit, one burner of three on high to get it up to around 250 degrees. Eating around 7ish so 5 hours to get the temp right and smoke for anywhere between 3 and 4 hours...

AFAIK, yes. (however I'm still doing trial and error with ribs in the smoker) but I've always cooked bone down / no turning.

Should be fine, AFAIK the stand isn't so much to hold the meat in a certain position for cooking as it is to allow more racks of ribs in a limited amount of space...
If you lay them down there isn't room for as many if you stand them up.

Almost 2 hours now. The heat was not enough to get a good smoke going, so I upped the heat a bit and use a small board to prop open the lid. Got some good smoke going on, and man it smells good.

Add the sauce whenever you have about an hour left to cook. If you put it on too early the sugar will burn.

Sorry for the delay. We stayed up till about 6am Sunday morning playing games and of course the guys ended up playing poker.
First a huge THANKS to everyone that contributed to this thread!
So we were supposed to have 10 people over and it ends up just being 6 total including Jess and I. Now I am thinking, wow we have way too much food. Anyway, the timing was perfect. I had put the ribs at 2:45, brushed on the sauce at 6pm and they came off the grill right at 7pm. 4 hours 15 mins of slow cooking and smoking. The chicken was finishing up in the oven and time to cook up the bacon wrapped shrimp on the grill. Everyone started showing up, and we spent the last 10 minutes of grilling with everyone outside by the grill.

Opinions - The only thing that was left was the chicken and that was only because there was so much of it. Everyone raved for hours on how good all the meat was. Course they were making fun of me for taking pictures of food to post on the internet.
The ribs were awesome! Pond007 the Dale's stuff was great. Although I did get one slab that was a little salty. I may have let them sit just a bit too long in the marinade. I had forgotten what time I started marinating them and I think it ended up being about 90 minutes. The gas grill smoker worked like a charm. The meat was so tender, can't say it was completely fall off the bone tender but I think the true testament is EVERYONE went back for seconds on the ribs and inside of 30 mins they were all gone.
The chicken was outstanding! Very juicy and like T said, very simple and easy recipe.
The bacon wrapped shrimp was also a hit. They ended up being the late night snack after reheating them for a bit in the oven.

Glad you liked the Dales. A friend turned me onto that stuff a few years ago, and I live and die by it. Simple but Very high in sodium.

The food looks awesome! I had the same result on the ribs being tender but not fall off the bone when I did them as well. I thought at the time maybe needed a little more time on the grill. I was right at about 4.5 hours when I did mine. Looks like you got a nice smoke ring on them as well. I wish when my friends invite us over they laid out a spread like that. Well done for sure, Guma.

The meat was so tender, can't say it was completely fall off the bone tender.
Next time, try my recipe, only takes 1 1/2 hrs, and they do come out fall off the bone tender. And they taste as good as ribs slow cooked for hours. :)
Will definitely give that a shot badaze
