This is a great meal.....heart attack inducing, sure, but mighty tasty.

Butter & a pack of shredded cheese to the grits.

Saute shrimp in the bacon fat for a couple of minutes

Add chopped greens, bacon and some lemon juice and saute a couple more minutes until the shrimp are pink

Plate the grits

Add the shrimp/bacon saute to the grits....try to not get too much bacon grease in with the grits, it's plenty greasy without it. Mix it up good and there you go!

Looks so good, I almost got a heart attack looking at it - you re-fried the bacon in bacon grease - awesome. I might try that this weekend.

Grits taste like nothing.
It's the southern breakfast of item of the south, comparable to mushrooms. They take on whatever flavor you cook with.

Think of it like very finely ground oatmeal texture with kind of a nothing tint to it.

They're pretty good actually. I usually put brown sugar on mine, or chopped bakon or ham.

Of course!

I think most people will agree when I say that (good) grits is a developed taste and texture.
I've tried syrup, jelly, bacon, ham, brown sugar, and I think that's about it. Syrup is good.
Try crispy bacon and a sprinkle of brown sugar.

Always butter. Butter is a given.

Growing up in VA grits are pretty common. I am sure all the southern boys will agree it is sacrilege to put anything sweet on them. No sugar, syrup, or jelly. Lots of butter, and salt are a given. I like cheddar in mine, top with some chopped crispy bacon, yum! Damn now I am really hungry, I have a physical this morning and can't eat either.

I hate to hijack a thread, but why eat something that has essentially zero taste until you doctor it up? That just seems like too much work. Don't you guys eat hash browns or fried potatoes/home fries?

I think I've had cream of wheat like once when I was a kid and it sucked, so for obvious reasons, I didn't go back for 2nds.

Only thing I can think of that could be comparable from recent memory was my son's baby rice cereal from back in the day. I tasted it and that was some bland ass shit!

I'm not opposed to making up a meal with grits as an ingedient.

But grits as a side at breakfast is what I don't get. Why get a bowl of no tasting semi-liquid when you could get some hash brown or home fries? Thats what I was talking about.

It's probably like rice. It has no flavor, and it's used to be mixed with other shit. Lettuce salad is another example.

I don't get it either, but it's not my cup of tea. They look rather gross to me - like a thick soup, and I can't stand soup. The bacon and the shrimp looked very good though!

I have a very good Filapino friend that cooks like a sonofabitch. He moved to Vegas, so I had to go out and buy my own rice cooker to get my rice fix. I also get my rice at the oriental store because anything at the local chain joints just sucks balls.

Cracker Barrel has them. They are good there. Oatmeal/Cornflakes/wheaties/grape nuts have no taste on their own. its a staple starch bro.

Never had grits but I LOVE Cream of Wheat! Can us in the SW purchase grits at the grocery store? Hell, I think the bacon and shrimp would be good on just about anything: grits, rice, mashed potatos, pasta...

Look in the cereal isle next to the oatmeal. IMO grits are very different than cream of wheat. CoW is creamy (duh) and made with milk, and should be sweet as all hell. Grits are more of the savory cousin. Similar texture but should be buttery and salty. You should be able to find instant grits by quaker. You probably cannot find "true" slow cook grits unless in the south. I know they do not carry them in my grocery here in OH.

This is the recipe, the only things I did different was; 1) I used pre-cooked shrimp, 2) I added cilantro and 3) i used a whole lb of center cut bacon....enjoy


1 cup stone-ground grits
Salt and pepper
1/4 cup butter
2 cups shredded sharp Cheddar cheese
1 pound shrimp, peeled and deveined, left whole if small and roughly chopped if medium or large
6 slices bacon, chopped into tiny pieces
4 teaspoons fresh lemon juice
2 tablespoons chopped fresh parsley
1 cup thinly sliced green onions, white and green parts
1 large clove garlic, minced

1. In a medium saucepan, bring 4 cups water to a boil. Add the grits and salt and pepper to taste. Stir well with a whisk. Reduce the heat to the lowest possible setting and cook the grits until all the water is absorbed, about 10 to 15 minutes. Remove from the heat and stir in the butter and cheese. Keep covered until ready to serve.

2. Rinse the shrimp and pat dry. Fry the bacon in a large skillet until browned and crisp, then drain on a paper towel. Add the shrimp to the bacon grease in the skillet and sauté over medium heat just until they turn pink, about 3 minutes. Do not overcook! Immediately add the lemon juice, parsley, green onions, and garlic. Remove the skillet from the heat.

3. Pour the grits into a serving bowl. Pour the shrimp mixture over the grits. Garnish with the bacon bits.

Note: If you are serving this as an appetizer, spoon 1/4 cup grits onto a bread or salad plate. Top with 1/4 cup of the shrimp mixture. Garnish with a sprinkling of crisp bacon bits and serve immediately.

Made this up last night. Quite tasty. I really don't think you can go wrong with a recipe that calls for 1 lb of bacon, a bag of cheese, and a 1/2 stick of butter. Thanks MagicRat. Chips sent!

born and raised in the south, Nashville, TN, and grits is one of the worst breakfast foods around. gritty, sandy, tasteless nothings. They suck bad.

btw, am I the only person who is deathly allergic to shrimp? I goddamned love shrimp, but they will kill me (along with lobster and crawfish, but crab legs are a-ok. go figure)

Dang zack, whoever prepared the grits you ate must've been screwing around with ya. There's nothing gritty or sandy about 'em...if they are prepared right (but who could screw up: add water and boil?)

Tasteless, I can somewhat understand since they need butter salt/pepper, etc, but then again so does potatos, pasta, rice.

I add syrup, brown sugar and honey to mine as well, but butter is an absolute must!

Yesterday, we hit up a Cracker Barrel for the first time in years. I of course had to get grits because I've never had them and just had to see what they are all about.

100% tasteless. I added 3 sugar packets and some butter to make them palatable. I've had grits, wasn't impressed with them and its pretty safe to say that i'll be sticking with hashbrowns as a side for the remainder of my breakfasts to come.

BTW...they had these kick ass cheesey hash browns yesterday.....all sorts of awesome!

T, grits can be hit or miss to your palate. But let me say grits shuold be savory not sweet. I too would choose the hashbrowns from CB as they damn close to bacon when it comes to delicious breakfast foods. You should try them again though. They need lots of butter, salt, cheese, and even crumbled bacon is good in them. Mmmm grits.

Here's a knockoff of the Cracker Barrel hashbrowns, originally from the 'Top Secret Recipe' website (I have the cookbook around somewhere), the recipes can now usually be found all over the place.

Cracker Barrel Hash Brown Casserole

1¼ hours 20 min prep


1 (26 ounce) package frozen shredded hash browns
2 cups shredded colby cheese
1/4 cup minced onions
1 cup milk
1/2 cup beef stock or canned beef broth
2 tablespoons butter, melted
1 dash garlic powder
1 teaspoon salt
1/4 teaspoon black pepper


Preheat oven to 425 degrees F.

Combine the frozen hash browns, cheese, and onion in a large bowl.

Combine the milk, beef stock, half the melted butter, the garlic powder, salt, and pepper in another bowl.

Mix until well blended, then pour the mixture over hash browns and mix well.

Heat the remaining butter in large, ovenproof skillet over high heat.

When the skillet is hot, spoon in the hash brown mixture.

Cook the hash browns, stirring occasionally, until hot and all of the cheese has melted (about 7 min).

Put the skillet into the oven and bake for 45 to 60 minute or until surface of hash brown is dark brown.
